Summer Quinoa Salad
Summer Quinoa Salad
Ingredients
- 2 cups of cooked Quinoa (to make it a little tastier I add 1 teaspoon of veggie broth paste in while the Quinoa is cooking)
- 1/4 - 1/2 cup of drained and rinshed canned chickpeas (amount depends on how much you ❤️ chickpeas)
- 1 cup chopped cucumbers
- 1/4 cup of purple onions
- 1/2 cup chopped tomatoes
Dressing
- 1/4 cup olive oil
- 1/2 fresh squeezed lemon or 2 tablespoons lemon juice
- 1 teaspoon thyme
- 1 teaspoon oregano
- Pinch salt/pepper
Mix everything together and enjoy!!
