Shrimp Scampi and Zoodles
Ingredients:
-2 tablespoons of olive oil
-1 pound of jumbo shrimp (shelled and deveined)
-1 tablespoon of minced garlic
-1/4 cup white win
-2 tablespoons of lemon juice
-2 medium zucchinis cut into noodles
-dried Italian spices to sprinkle on finished product
Directions:
Warm olive oil in large sauté pain on medium to low heat. Add the garlic and cook for 1 minute, stirring continuously.
Add shrimp to pan and cook until pink on all sides for about 3 minutes, stir as needed. Season with salt and pepper as desired then remove shrimp from pan with a slotted and place in a bowl.
Add white wine and lemon to juice to the pan and increase heat to a medium to bring liquid to a boil. Cook for about 2 minutes then add zoodles to the pan and cook for 2 minutes. Return shrimp to pain and toss to combine. Add salt and pepper to taste and garnish with Italian spices.
For 21 day fix containers - measure out 1 red of shrimp and 1 green of zoodles
This looks delish, but at the moment I am warry of using any alcohol that isn't cooked for a long time. Do you have any suggestions for a substitute for the wine?
