21 Day Fix/Hammer and Chisel Approved Blueberry Muffins


Gather these goodies: 

  • 1 1/2 cups almond flour
  • 1/8 tsp salt
  • 3/4 tsp baking soda
  • 1 tbsp coconut oil (melted)
  • 2 eggs
  • 1/2 tsp of pure vanilla extract
  • 3/4 cup bananas, mashed (roughly 2)
  • 3/4 cup blueberries




This is what you do: 

  1. Preheat oven to 350 degrees.
  2. Mix together the flour, salt and baking soda.
  3. In smaller bowl -  mix together the coconut oil, vanilla and eggs.
  4. Add the egg mixture to the dry ingredients and stir.
  5. Stir in the bananas and gently fold in the blueberries.
  6. Divide equally into lined muffin pans (makes 9).
  7. Bake for 30 minutes, until toothpick comes out mostly dry.
  8. Devour 2 muffins before they are completely cooled off they taste the best fresh and warm out of the oven! 

Containers: 2 muffins Roughly 1 purple and 1 blue

  1. Thanks for sharing! So is the serving size 2, and that equals 1 purple and 1 blue? Or you are just saying eat two while they are hot?
