Summer Quinoa Salad

Summer Quinoa Salad


Ingredients
  • 2 cups of cooked Quinoa (to make it a little tastier I add 1 teaspoon of veggie broth paste in while the Quinoa is cooking)
  • 1/4 - 1/2 cup of drained and rinshed canned chickpeas (amount depends on how much you ❤️ chickpeas)
  • 1 cup chopped cucumbers
  • 1/4 cup of purple onions 
  • 1/2 cup chopped tomatoes
Dressing 
  • 1/4 cup olive oil
  • 1/2 fresh squeezed lemon or 2 tablespoons lemon juice
  • 1 teaspoon thyme 
  • 1 teaspoon oregano 
  • Pinch salt/pepper
Mix everything together and enjoy!!
