The dried fruit adventure!

For some reason I have been struggling with how to perfect making dried fruit in my oven!  Today I perfected the dried apple slices! I think the key to my success was getting a mandolin slicer for Christmas.  I used amazing honey crisp apples.  Sliced them on level 2 on the mandolin slice. Laid them out on parchment paper on a cookie sheet. Placed in over at 200 degrees for one hour. Flipped apples over and cooked for one more hour.  Anna I polished them off in 30 seconds flat!  Super yummy, crispy and healthy!

The Chronicles of the Hip - Chapter One.

Here we go....   Starting from the moment of impact. May 5th 2013 - I finished running my first half marathon. In 2 hours and 1 minute. Really? My goal was under 2 hours but the "kill hills" at the end, well, killed me. Yet, this was the most amazing race of my life. Hubby and I crossed the finish line together just as the president of the hospital I work for was placing a medal around my neck and I was about to hurl. Thank goodness I was able to contain my stomach contents. Although, what a great story that would have been....   We survived together! Fast forward a couple days, legs still felt heavy and sore. Being my usual self with the walk it off philosophy, I jumped on the treadmill and instantly knew I made a mistake. It felt like my femur had just been shoved through my hip socket into my abdomen. Hello everyone! I have finally decided to crack down and make a blog for Crazy Strong Mom. I feel it is one more way for me to help spread the amazing news of my health and fitness transformation for myself and my family!  My Family! I have always been a huge fan of Beachbody videos - all the way back to Slim in 6 on VHS back in high school! Then moved on Turbo Jam and fell in love with Chalene Johnson. Taco Fries - Paleo Amazingness!

When I first started looking for Paleo recipes this was one of the first ones that came up and we tired. It is super easy and the kids loving being able to put their own toppings on! Plus, I am an addict for the sweet potatoes so how could we go wrong here?  Recipe - Compliments of  Paleo Leap Serves: 4 Prep: 20 minutes Cook: 35 minutes Ingredients 6-8 sweet potatoes, peeled and cut into wedges; 1 lb. ground beef; 2 tomatoes, chopped; 2 green onions, sliced; 2 bell pepper, chopped; 1 onion, chopped; 1 garlic clove, minced; 1 tsp. chilli powder; 1 tsp. paprika; ½ tsp. ground cumin; paleo cooking fat (bacon grease, coconut oil) Sea salt and freshly ground black pepper to taste; Directions: Preheat your oven to 425 F. Combine the potato wedges in a bowl with some melted cooking fat, and season to taste with sea salt and black pepper. Place the wedges on a baking tray in a single layer, and roast in the oven for 30 minutes or until fries are cris
