Summer Quinoa Salad
Summer Quinoa Salad Ingredients 2 cups of cooked Quinoa (to make it a little tastier I add 1 teaspoon of veggie broth paste in while the Quinoa is cooking) 1/4 - 1/2 cup of drained and rinshed canned chickpeas (amount depends on how much you ❤️ chickpeas) 1 cup chopped cucumbers 1/4 cup of purple onions 1/2 cup chopped tomatoes Dressing 1/4 cup olive oil 1/2 fresh squeezed lemon or 2 tablespoons lemon juice 1 teaspoon thyme 1 teaspoon oregano Pinch salt/pepper Mix everything together and enjoy!!
