Fruity Chia Seed Pudding Things you will need: 2 cups of fresh fruit - this batch I used strawberries, blueberries and raspberries 13 1/2 ounce can of coconut milk 1/3 cup of honey 1 teaspoon of vanilla  juice of 1 lime 1/2 cup chia seeds  What to do! Place everything but the chia seeds into the food processor or blender and blend until smooth Place the chia seeds into large bowl then pour fruit mixture over seeds and mix, let sit for about 10 minutes then stir again, cover and place in fridge for at least 4 hours. Remove from fridge stir and enjoy!!  This goodness can last up to 3 days - the longer it sits the thicker it can get so mix a little water if if need!  The sour of the lime and the sweetness of the honey and the creaminess of the coconut milk make this recipe amazing!
